Depends on the DPS of the camp  Not saying it would be easy, but... it's in the realm of theoretically possible

To come back to the hic... Haven't used one yet, didn't even encounter one in combat (lowsec).
How do hics stand against the sentryguns? Can they tank em if you fit it right?

they tank the sentries just fine.
to a gank bs + sentries they will go down, rather fast as their hitpoints are rather low. most of their danger comes in the form of gangmates as they have rather low damage output and can't do much than gank frigs/crusiers/haulers

I've never had to probe out a freighter - but I've probed down other ships that logged off. Why would you need all that DPS on a loggoffski Freighter when you probe it down? I thought once its probed and you have it tackled - its can't disappear - or have I just nuked my targets too fast to notice this?

I remember when they first came out people would freak out - 'Man I couldn't take it down with 4 gank BS!!! They've got a tougher tank than a command shiP!'
Then I realized the joys of finding tech 2 ship resistance holes with m'Raven!  
But yeah to backup Chainsaw - HIC's are designed to tank and tackle (if they're meant to tackle super capital ships, then a set of low sec sentry guns is a walk in the park for them). Blockade Runners are NOT easy to catch. You're lucky if you catch one if it isn't setup right. Even with a HVY Dictor being remote sensor boosted upwards of 2000 scan res, it's still VERY hard to catch one.
Hell, the dang mwd/cloak/warp trick saves a lot of people as well.

On the "nano BR", it's a natural way to fit the blockade runner. HICs don't force it. A slow align to warp can kill you even if your lows are filled with stabs. Either they get enough points on you to render the stabs useless, bump you out of alignment, or bring enough alpha to instapop you. All that isn't a problem, if you manage to warp out first.

Cause last time I've tried, scrambling a Prowler* fitted with low friction rigs and inertia/nanos even with sensor boosted (or remotely boosted) ceptors was nearly impossible. The damn things warp off in less than 3 seconds (I think EFT calculates 2.5 sec or something). Roughly 1 second is wasted as the "victim" decloaks while aligning after pressing "jump-to", and the physical limitation due to the game interfacing forces the wannabe tackler to lose .5-1 sec above that. What's left? 1 second or even less to actually lock the target and apply at least 3 points on it...
Only Bubbles can stop BRs, and these where not introduced with HICs, but before them. Surely the infinite scramming power of a scripted field generator makes WCSs useless, but that kicks in after a HIC acuires a lock, doesn't it? And game mechanics, interface + lag (each an EVE's feature) really makes it very hard even if the opponent is directly or indirectly sensor boosted. Yeah, it's possible, yet not likely to happen. Admitting the opposite would simply mean that the OP and every other "boost BRs" suggestion implies that BRs should be immune to scramming.
After all, making BRs more "challenging" to fly and actually requiring not-flying-it-AFK like SO MANY do in both high and low sec, proper fits etc is GOOD for business when it comes to "pro" blockade running pilots: the amateurs die horribly, so passing through those darn camps will bring more profits for the experienced player, who could dominate nearly-perma-camped territories' market.
Even if a HIC can be remotely SBed to strengths that could catch nanoed BRs, means nothing "new": a team of players is working together, making sacrifices for a specialized gang-fit to catch stubborn "solo-blockade-runners" that believe scouting is for losers. It's easy to see why that should always be rewarding for the team, and not the lone-ranger. And stop thinking "out-side" PvP...everything in EVE is PvP oriented, at least trade and module circulation surely is.
EDIT: * I've mentioned a Prowler cause that's what my buddy flies and I had the opportunity to practice extensively on/against. The guy you quoted was wrong; a solo HIC under sentries just dies to a solo, say, BC. i managed to solo a devouter....in a friggin sentinel all you have to do is get a single neut on them when they attack you and with the gateguns on em + mwb warp scram thingy and tank running they will die horribly and painfully

Youre going to die if you get within webbing range. I have seen it before and will see it again. your not going to keep a ship off the gate solo very easy wigout dieing. you have to bouce the ship which means SFA tracking... and your webbed... either headed tot he shiop or away from. YOUR paper thin.
