The cans should stick around but the roids will go away unless someone stays next to them. Remember to bookmark one of the cans so you can get back to them as the bookmark for the mission goes away when you turn it in.

I'm trying to figure out if I need a POS to produce an Orca or any of the components. I know many cap-ships can't be made in high-sec/empire, but I can't see where to find out if a BPC/BPO requires a POS assembly array or not.
