I had this exact same problem, I fixed it by changing my color depth in the game video options to 24bit/8bit alpha, try it out :)

Anyone know where I can find that handy utility that makes EVE full screen yet makes it act like a window, so you can alt-tab and it responds instantly, hard to explain but I saw it around before.
