The only thing of worth in this thread is related to stew. Apparently booking your flight & accomodation to Iceland BEFORE you buy the tickets for the convention which is pretty much the only reason you wanted to go there in the first place is popular. |

This interview is worth listening to.

i suppose there are non-chicken meats that might be delicious i'm not sure ive ever had a pork stew or the like The issue here is that you're thinking in exclusive terms. Combinations of meats can work really well; I can recommend a 3:2:1 beef/belly pork/chicken thigh combination for stew, as the variety of meat flavours really works well. It works well for chilli also. That's really true, I had not even really considered multi-meat stews. Clearly I'll have to try these out and figure out where they fit into the objective ranking of stew types.
I would like to suggest that the king of the stews is goulash. Beef and absolute piles of paprika makes for good eating, and has innate superior over other, non-paprika'd stews.
Then you make some with venison and enter a whole new dimension of taste.
Meat combinations are also good, but I'm not sure I approve of chicken in a chilli; chilli's should be red meat. |

Curry and spice and chili goes with white meats like chicken or duck or turkey, or more tender red meats like lamb (not mutton). I can't possibly condone the using of venison for currying. Beef at a pinch, but currying venison would be like currying rabbit; you just don't do it.

Chilli != curry.
I'm talking a good old fashioned stew of chunks of meat and chilli peppers that would make anyone in the Southern states weep at the beauty (and preferably at the sheer amount of capsaicin).

It means 'wailing man-child who doesn't appreciate a good stew'.
Speaking of, if you're after a simple stew you generally don't want to go over-heavy on spices, although salt and pepper are essential, and I personally tend to add a bit of ground mustard, a pinch of cayenne, and meat-appropriate herbs; start with a good, hearty meat stock, brown your meat properly, provide a good mix of vegetables, and leave to simmer until vegetables are cooked and it reaches your desired consistency. |

If any of you are going to FanFest, I highly recommend the Goulash soup at Cafe Paris in Reykjavik. It's made with a delicious tender local lamb, but not as spicy as one might like and not quite an actual goulash. It's delicate, but large in portion size and is quite filling for the price. Chicken and red meat definitely doesn't work together, though chicken by itself in a chili verde can be tasty as hell (even then pork is better). "Look any reason why you need to talk like that? Pork and chili do go together; Some diced pork shoulder adds more wonderful fats to the mix. And fat means flavour. Wonderful saturated artery-hardening flavour. |

I can see that we simply have a fundamental difference of opinion regarding what constitutes 'good' food and what is a culinary catastrophe. Honestly, I don't feel that it is going to be of any benefit to either of us to continue this debate unless you can change your barbaric world views first.
