Because people spend their entire lives living in a relatively flat plain, and get disoriented when asked to maneuver in a truly 3d setting with no landmarks at all. It gives people a common point of reference.
A good example of this is Homeworld vs Nexus: The Jupiter Incident. Homeworld has the game centered on a flat plain, and the camera is leveled off on this as well. Nexus doesn't have this. Most people found Nexus' controls and views ungainly and disorienting, and harder to maneuver to do what you want to do. Homeworld was easy because you always had the same frame of refence.

look at our solar system. the planets are also flying around the sun in a allmost flat way.

Yeah. First two books were good then the series crapped out. Ender's Shadow was good though.
My second fav. bit is when he signs the Piggy contract and they realise he is the genocide. His response when the point out he killed more people than anyone else in history "My father told me to always be the best at what I do" was classic :)

If I am for example outside a station, I can fly, relative to the station, every possible angle. What do you mean? ___________________________________________________

Anybody who's played Descent or run around as the Alien in AVP will know the perils of opening up 3D into its true glory, and unless you develop an unparalleled ability to process three dimensional space you won't have any idea what direction you're pointed or where that missile came from.
Anyone remember the very first time they played Elite as a kid and launched from a station? The end of Star Trek II - Wrath of Khan? Think of the possibilities!
I'd love to see it. But I also realise that noobs are finding this game complicated enough as it is without having their only orientational points of reference removed as well :)

1) Move camera so it's facing the top of your ship 2) Double click in the area around your ship (but not actually on it)
Congratulations, you are now flying down. It's surprisingly easy to fly upwards too using a modification of the above method.

Anyhow, I think what the OP is getting at, is that wherever you are in eve, youre movements and such are all relative to a fixed 'flat' coordinate system. In addiditon to this, I have tried and tried to get my ship to fly directly down or up, but it just wont do it. Also, have ever tried getting your ship to be 'upside down' (in relation to the aforementioned fixed coordinate system)? Nope doesnt work too well either.
There is also the whole aspect of newtonian physics (or the lack therof).
Long ago, I came to be comfortable with the facts of life in eve, we are flying around in a liquid filled 'space' with a clearly defined 'up' and 'down', not REAL space.
Still a damn fun game imo.
