Righty, i've seen threads on this topic before but I can't find any floating about at the moment so I'll start another.
Having just borrowed my friends copy of the ghost in the shell film and the two stand alone complex box sets my curiously is now piqued, so what other decent anime series or films should I be looking to beg steal or borrow?
I've no doubt loads of people will have some recommendations

My top three anime at the mo are
1. Neon Genisis is widely regard as being the best anime series made. Good thing to remember when watching it is that the psychology of the main characters is more important than the plot/action. It helps if you know that the main theme is how people determine there own self value through social interactions.
2. The melancholy of Suzimaya Haruhi. The best anime of last year. This is best described as a high school, sci fi, fantasy, romantic comedy. Hopefully that explains everything . It is intelligent, funny and has a very original storyline. It also has the highest quality of animation I have seen in a anime series (not movie tho). Episode 11 should appeal to EVE players. After watching it make your own Nagato is a BoB pilot jokes .
3. Another great anime that is heavy on the psychology side is Elfen Lied (lit. Elf song). It is about how people react differently to truama. Word of warning, There is alot of graphic voilence and nudity, which can be mostly justified. There are two scenes in particular which some people might find quite offensive and difficult to watch.
There are lots more worth watching but I am sure other people will give you their lists aswell

1. Baku no Pico, easily the best action series ever made.
2. Bible Black, a light hearted schoolyard comedy.
3. Urotsukidoji, a very deep supernatural drama.

Laughing at my suggestions is pretty out of order. I don't particularly like some of the anime you guys suggested but I didn't ridicule anyone for it.
I expected more from the eve community. I was always under the impression that people here were fairly mature but obviously I was wrong.
I am especially disappointed in you dark shikari. Someone as well known as yourself should know better than to pick on someone just because you don't share their views.

Ergo Proxy and Cowboy Beebop.
I like the more serious anime, I can't really stand the other stuff (with kids who are always screaming about something and cheaply made action scenes where only the background moves).
Elfen Lied is also... uhh, interesting =P

Of course the classics...ie: Ninja Scroll, Akira, Cowboy BeBop(sp?), Macross
But then after those...I have been really into Patlabor(sp?) Ghost in the Shell, Blue Gender, and the Bubble Gum Crisis.
Oh...and Voltron ofc.

Right, so my post was eaten by the forums, I'll keep it brief this time :P
MOVIES- Akira - If you haven't seen it, and you are getting into anime, you need to watch this, it's a classic. Cowboy Bebop Movie - I watched it before I watched the series, another one you need to watch.
SERIES- Rurouni Kenshin. The four OVA's (Original Video Animations) is some of the best anime out there. Cowboy Bebop. Watch it. All of it. Awsome plot, nice filler stories, good action, awsome characters. Black Lagoon 1 and 2. Very interesting series, it's about modern day pirates. Watch the first few episodes, and if you aren't hooked, well... meh. Hellsing OVA's. Wow. Amazing. Must watch :P

Hellsing: http://www.imdb.com/title/tt0325547/ Vampires! Everybody likes vampires! This series, also listed above, is really something to watch. Quite a few innovative picture compositions, good story and good action.
Witch Hunter Robin: http://www.imdb.com/title/tt0402716/ I must admit, I felt a bit bored and cheated on after I was done watching the series, I intent to find out if it was the series and watch it again; Never got around to it, though. But overall it's nice and I was entertained.

Make that Serial Experiments Lain.
And once you're done with that one, read the website "Thought Experiments Lain".
Its a damn interesting, deep series, probably one of the best. One of my favorite at least.

Mickey Mouse is pretty cool, he fights crime so it gets abit serious at times tho. Get Steamboat Willie for the mostest hardcore stuff. The newer stuff is a tad weak.

Don't forget; 4. Dark Shell, a documentary on undersea wildlife.
On a less serious note, the original Dirty Pair series (TV and/or OVA) is highly recommended if you like action movies.
Cowboy Bebop (Highly Recommended), Bubblegum Crisis (original series), FLCL (Highly Recommended), Full Metal Panic (not to be confused with Full Metal Alchemist), Ah! My Goddess (Highly Recommended), Tenchi Muyo, Appleseed, Slayers, and Magical Girl Lyrical Nanoha.
I would suggest you rent or borrow from a friend (but not buy [at least until you've watched it all once]) the omnipresent Neon Genesis Evangelion (just so you can go WTF?! with the rest of us).
That covers a few genre of anime: Action, Mecha, Harem, Sorcery, and Magical Girl Transformation... Have fun!

RahXephon, Gankutsuou (AKA The count of Monte Cristo), FLCL, Ergo Proxy, Azumanga Daioh, the ovas of Tenchi Muyo (Tenchi Muyo GXP is a series that sprawled from here btw), the ovas of El Hazard (the first one rocks), 12 kingdoms.
small notes: - Evangelion is not that great; - you can find working weird mixes (Cowboy Bebop, AKA space western with jazz/blues tune, and Samurai Champloo, a story that mixes feudal japan and hip-hop are great examples); - Cromatie high school is damn funny. -------

Currently enjoying: Naruto Shipuden (e.g Naruto season 2) Bleach Death note Pumpkin scissors. and the Amazing, stunning perfect funny, musicial : Nerima Daikon Brothers (DS if you've not watched this you really should, its on the same level as Azamanga)
Note Eva is good, but it's one of those things that just because alot of people like others will insatantly decide they dont'. Plus not every one like Big Mecha anime.

Cowboy Bebop Hellsing Full Metal Alchemist
Another anime that I thought was good (but not extremely bad ass), is Shadow Skill.
Wish they made an action based anime of Firefly

anime - berserk manga - blade of the immortal
others: everything else people have listen. cowboy bebop, samurai champloo. fist of the north star is old but good. just got finished watching 109 episodes. raoh gaiden - fist of the north star movie. recently came out. pretty good. may be a bit lost if you're not familiar with the story though.
