Another good one (with an amazing dub) is Nerima Daikon Brothers.
I can't pimp this series enough, it's done by the guy who made Excel saga, and it's funny and funny and will kill you laughing.

Well I have been watching a lot of Helsing on winamp/shoutcast. It's pretty cool anime. Vampires etc. Crappy intro and end music though 
But Akira and Ghost in the Shell are the standards by which I measure anime.

With regards to the sub Vs dub issue. I would always recommend watching the sub, the only exeption being the rereleased studio ghibli films since it is Pixar who does the subs for them and they have a very high quality of trans and VA.

Since nobody has already mentioned it I think I had better. Grave of the Firelies is probably one of the most important anime films ever made and certainly one of the most important war films ever made. You won't hear this being called the best/favourite anime of all time becuase this film is one of those films you can only watch once. It is by far the most moving film I have ever seen, anime or live action. The closest western film to this I can think of is Schindlers list but even that is not quite on the same level.

Karaoke is huge all across Asia, far more than any wapanese could imagine. Go to China, Taiwan, Korea, Japan; you will find karaoke machines and people singing to them. Its one of those things that never really caught on here.
That's true but the karaoke is added by the fansubbers. The original anime doesn't have it at all. As we speak there are fat virgin nerds singing along in their parent's basement.

Oh you mean the lyrics on the episodes themselves?
Yeah its added by the fansubbers, but as far as I can tell its out of tradition more than anything else, and a chance to "look cool" by using fancy effects.
I don't know anyone who downloads fansubs and actually sings to them .

I'll have to recommend The Melancholy of Haruhi Suzumiya as well, clearly the best anime of last year. Wikipedia link
Other animes not mentionned here that I'd recommend are: - Kimi ga nozomu eien (the eternity you wish for): a nice dramatic romance series. If you enjoy that kind of stuff, of course. Watch at least the first two episodes before giving your opinion on it (and prepare the third episode for viewing immediately after or you'll scream bloody murder :) - Mahoromatic: a light and fun tale about an a fighter android deciding to retire as a maid for a young orphan, knowing well she only has about a year left to live. - Utawarerumono: Tactical RPG game turned anime, the right way :) Lots of epic battles and a pretty decent plot. - Kamichu: a light-hearted story about a young girl realizing she's a deity and tries to help others with her new-found abilities. Very Miyazaki-esque and cute. - Yakitate Japan: An anime about making bread. Funny and surprisingly addictive.

Vampire Hunter D is very very good. It's a long time since I've seen it now, and it reminds me I want to see it again.

Got to love Ghibli studio, these next ones are from Ghibli, might want to look all these up, and look up other Ghibli I haven't mentioned.

I learned this way way back when i saw my first anime Akira. I watched it dumbfounded and was eager for the dubs I bought it on my 15th birthday and watched it that night. It took me a while to understand why i didnt like it as much. The dubs just seem to detract from its quality.
The only exception to this rule i have ever seen is with Studio Ghibli productions.

I see plenty of people recommending Outlaw Star which is a good one. I'd also have to recommend Battle Athletes and/or Battle Athletes Victory. R.O.D. the TV is pretty cool too, from the bit I've seen.
