I dunno if this is classified as anime but Outlaw Star imo was great, maybe not epic but definitely worth buying the dvd.
I haven't been able to find Here and There, Now and Then at any local retailer or any rental place except for a no-name, family owned place in Folkston, Georgia... It really ****es me off as from what I saw it had potential to be a great watch. (guess I'll have to buy it online.)
GiTS is what got me into anime and it remains one of my all-time favorites. GiTS: SAC is an awesome series that never fails to keep me entertained. (I love Comcast On-Demand!)

It's weird as hell, with a really unique fantasy setting, and although it starts incredibly slowly, it gets better and better and the ending is pure genius. Don't let the fact it's usually classified as yuri put you off. It's not ****.
EDIT: Here's some of my other favourites 
Ouran High School Host Club - hilarious all the way through The Macross series - completely epic, even the ancient original series is awesome Fullmetal Alchemist -

This sums up every anime I consider worth watching:
Ginga Eiyu Densetsu - Soft sci-fi, 110 episodes in all, one of the most epic anime shows ever. Planetes - The only hard sci-fi anime I've come across thus far, great story, too. Wolf's Rain - Fantasy/adventure, positively high on drama after watching the last (admittedly, confusing) episodes. Ghost in the Shell (all) - Soft sci-fi/dystopia/semi-ecchi, a somewhat successful attempt at making a deeper point beyond the shallow surface story, but the whole "transhumans r evul" statement gets stale after a while. Still, one of the most accurately developed universes in the anime world that doesn't rely on a real mythology.
Since my comprehension of spoken English is just as good as my understanding of Japanese (that is: zero), I usually prefer subbed versions.

Haruhi, GITS:SAC & Deathnote for the collective win.
I hate all the mech anime's with a passion though. Code Geass I would have watched further if it werent for the stupidly improbable Mechs with claws that shoot from it's chest (What sort of crap weapon is that)
I'd understand if it were partly tongue in cheek ala Gurren Legann (which was good) but I cant suspend disbelief when they take those things seriously!

Elfen Lied is what a 12 year old with a fascination with blood would make. I was caught between disgust and laughter at how bad it approached some subjects. If you like this then you probably have Wrestlemania posters adorning your walls and Jerry Springer Boxsets displayed proudly amongst the other brick-a-brack an intellectually disabled people might accumulate.

I dislike anime that rely completely on overused gimmicks to attract viewers (and I dislike the viewers who fall for it) - however Geass doesn't rely solely on these, it also has FABULOUS and JUST AS KEIKAKU'd. -

anime movies i liked: paprika the girl who leapt through time most ghibli tekkonkinkreet and mind game very unusal style, highly enjoyable and of course ghost in the shell 1 and 2
I consider all of those above average anime niveau and it would really be a shame if you don't watch them

Also, for those alittle more dirty minded... La Blue Girl is fun (only for those considered adults in their respective countries, please )

Those animes i found pretty good to watch. All subs are good except for Maburaho where i prefer Dub is better for some reason.

That said, the single best episode of Haruhi - All ships CHAAAAARGA!!!   
Note, the series is a bit like Ghost in the Shell, a few arcs that are standalone in their delivery.
